Hello friends, I hope you are well. Today’s newsletter is a quick recipe that I’ve been making often these last few weeks, to add to salads or for a sweet little something to end a meal. Often our salads these winter days are filled with dark, bitter, or hearty greens that benefit wonderfully from a touch of sweetness and crunch for balance. I absolutely love walnuts and buy a giant bag of in-shell walnuts to crack over the winter months. They are delicious as is, of course, but really incredible dressed up with a glossy candied shell. I had been candying nuts the traditional way with sugar, but found them a little too sweet. Maple syrup candying works very well, is less sweet, and lends an extra malty flavor as well that’s just delicious. I also find it less fussy to work with than sugar, as it doesn’t crystallize easily.
These nuts are perfect to make for yourself to enjoy, but also, placed in a pretty jar and tied with a ribbon, make a nice little gift, too. I hope you enjoy, and that you are taking care of yourself and making room for slowness in this often chaotic leadup to the holidays. A big hug, x A
