Hello friends, this is the season of tea, isn’t it. Unless you are one of those people (like my husband) who think tea tastes like dirty water. Ha! I love English and Scottish breakfast tea in the morning, peppermint in the afternoon, and chamomile or chamomile lavender in the evenings. I love a milky cup of strong rooibos, and also there is nothing better on a cold day than a frothy cup of chai for warming from the inside out. I’m sharing below my method- this is simply the way I make it; adjust to your own preferences and tastes as desired. I like to add dandelion root for its medicinal qualities and flavor but it’s not necessary nor traditional. I like to make a larger quantity of concentrate to keep in the fridge to enjoy throughout a few days. Sometimes I just strain out enough for a cup, add in another cup of water, and continue simmering on the stove, repeating until it gets too weak.
